The University of Nevada, Las Vegas (UNLV) University Libraries Menu Collection consists of menus from restaurants, events, and travel excursions dating from 1852 to 2010. It includes menus from throughout the United States, with the majority of menus coming from Las Vegas, Nevada and Southern California. It also contains materials from many countries as well as travel menus from passenger rail travel, cruise liners and ships, and airlines. The collection also includes dining ephemera consisting of dining guides, food service trade information, and other materials related to restaurants.

The Ralph Roske Papers (1957-1989) consist of Ralph Roske's book manuscripts, lecture notes, and correspondence. The collection includes extensive lecture notes on the United States Civil War, United States history, and Nevada history. It also includes Roske's research and manuscripts on Nevada, California, and the United States Civil War, as well as student
papers. Ralph Roske was a professor of history at the University of Nevada, Las Vegas (UNLV).

The Julius Jensen Professional Papers (1630-1979) consist of medical research notes, medical journal reprints, manuscript and article drafts, professional and personal correspondence, business and financial records, investment information, travel information, photographic prints, art prints, and collectible books and magazines.

The Educational Equity Resource Center (EERC) records contain material from workshops hosted by the EERC throughout Southern Nevada, especially Las Vegas, Nevada, between 1973 and 2000. The EERC aimed to provide teachers, students, and parents information on gender equity education, support, and training. Workshop materials include participant worksheets, surveys, brochures, instructional booklets, advertisements, correspondence, and evaluation forms. Workshop participants include K-12 students, postsecondary school students, educators, and parents. The records also include EERC organizational correspondence, reports, newsletters, publications, and resources detailing workshop and EERC funding, development, and promotion.
Archival Collection
On February 24, 1980, Robert Cannata interviewed his neighbors, Lee & Dick Igert about their employment agency company. The Igerts discuss the many different job opportunities outside of casino work that are available in Las Vegas, Nevada. The interview concludes with an explanation of how one finds a job in Las Vegas.
