Description
On March 3, 1979, William Hawley interviewed Oliver Crickman (born 1933 in Apex, North Carolina) about his experiences from living in Nevada and working in restaurants. Crickman first describes his background and his first occupations prior to starting as a cook in Las Vegas restaurants. He then explains how he gradually moved from the position of cook’s helper to sous chef and his then-current position of executive chef at the Royal Inn. Crickman goes into detail about the operation of those restaurants and other Las Vegas Strip and Downtown Las Vegas properties, and he describes the demographics of cooks as well as how the hospitality industry has changed over time. The latter part of the interview involves a discussion of Crickman’s various residences in Las Vegas over time, the extent of crime, the first places to shop, and a brief discussion on mobile homes.

On March 15, 1981, LeGary Stowers interviewed Victor Givens (born 1958 in Las Vegas, Nevada) about his profession in the gaming industry, specifically as a table games dealer. Givens first talks about his family background and then talks about his educational, occupational, and residential histories. He then talks about the various qualities required of individuals who work in the casino industry, his beliefs regarding religion and gambling, and some of the motivations and goals that are present for those within the field of gaming.

Abstract
Oral history interview with Judy Roen Smith conducted by David G. Schwartz on October 27, 2003 for the UNLV University Libraries Oral History Collection. In this interview, Smith, the daughter of Allard Roen, talks about growing up in Las Vegas, Nevada. She discusses the family home on the golf course of the Desert Inn Country Club Estates, her parents' determination to keep their children outside the casino environment, and the few memories she had of visiting the Desert Inn Hotel and Stardust Hotel for special occasion dinners or family-friendly shows like Jack Benny and Danny Kaye. She also discusses her early education and the relatively closed circle of friends whose parents also lived on the Country Club grounds. She shares stories about her parents, some of her father's associates, and her conviction that no one in her circle of friends ever talked about a Mob influence on the city. She also discusses the family's move to La Costa Resort in Carlsbad, California, where she finished high school, and going to work in marketing for the casino trade.
