Add 2 roughly chopped onions and simmer four or five minutes. Stir occasionally. Add salt, paprika and crushed garlic, then stir well. Fold in canned tomatoes. Cover and cook slowly for one hour. Add potatoes and boiling water. Continue simmering the goulash, basting potatoes from time to time until the gravy is reduced to V3 its original quantity and the meat parts easily with a fork.
