And it looks as charming for the evening as it does tailored for day wear. 7 "?√ß'.'?√ß"?√ß- " Recipe of the Month CHEF HENRI PETITJEAN Executive Chef, Desert Inn & Country Club HUNGARIAN GOULASH (Serves 6) 2x/2 lbs. lean beef chuck 2 medium sized onions 1 (size 2Vi) can solid-pack tomatoes Wi lbs. potatoes, peeled and quartered 3 teaspoons salt 1 heaped tablespoon paprika 1 clove garlic, crushed Vi pt. boiling water Cut meat into 1 Vi inch squares and brown quickly on all sides in a heavy skillet with just sufficient fat to prevent sticking. Add 2 roughly chopped onions and simmer four or five minutes. Stir occasionally. Add salt, paprika and crushed garlic, then stir well. Fold in canned tomatoes. Cover and cook slowly for one hour. Add potatoes and boiling water. Continue simmering the goulash, basting potatoes from time to time until the gravy is reduced to V3 its original quantity and the meat parts easily with a fork.
