    26 Las Vegas Review-Journal Monday, December 15, 1952 Henry Stack One of Top Stewards fH When it comes to knowing fine food?╟÷and where to get it?╟÷Henry Stack, affable steward of the Sands probably is one of the best informed men in the nation. HisJKnb^idge of fine* foods has been pint up from? more than 35 years experience in some of New York City's finest - rest&^ants ?√ß*?√ß. and is matched by his acuigen a^feusK nessman. Stack formerly was Associated With the Monte Carlo, the Riviera and Rio Bamba, all well-known New York City nightclubs. He was manage of the Riviera for Ben Martin, when the nightclub started, and recalls his tenure, at the Rio Bamba because it was there that he played a big part in starting a singer off on the road to fame?╟÷Frank Sinatra. "Yes, Frank started at the Rio Bamba," Stack recalls. "I had to, beg them to keep him, at one time. I even used to feed him when he was broke:" In his position of steward, Stack has responsibility of buying all the supplies for the kitchen^ Of working in conjunction?╟÷and harmony?╟÷with the chef, Leon Chauveau, To show what the "steward's Job involves, Stack said he bought $15,000 worth of meat, $10,000 worth of groceries, and; $5,00Q worth of vegetables and fruits to stock the kitchen for the opening of the Sands. In addition, thousands of dollars have been spent for dishes, glassware, silver and linens. ^^jfe , Meat, vegetables and groceries are stored in five refrigerated rooms. tI^ Stack takes particulai^pfide in ttie wide selection of fancy,: imported foods, purchased f^lppne of the nation's leading importers. A glance at the labels uwlicajtes that the Sands grocery stqckpom is a true "United Nations of food, including such delicacies as asparagus from Hollandfc truffles -wom France, Pineapple from HaJfaii, celery from Bmgium, hearts" of palm from Brazil?╟÷yes, and even pork and beans from Van Camp's, JJ.S.A. Working in harmonious conjunction with a chef, Stack admits, can be a problem at times. "If I don't )wmwhat, the chef likes, he can get mad," Stack explained, "and U 1 buy something he doesn't like* he might not cook It." But he says he has no worries in regard topper Chauveau, for they once worked together for 10 years.
