    BROCCOLI, NOODLE, CHEESE SOUP
    2 tbsp, oil 1/8 tsp. garlic powder
    3/4 c. chopped onion 6 c. milk
    6 c. water 1 lb. American cheese, cut up
    10 ounces fine noodles pepper to taste
    1 tsp. salt 6 chicken bouillon cubes
    2-10 oz. pkgs, frozen chopped broccoli
    Heat oil in large kettle, add onion and cook for 3 minutes. Add water and bouillon cubes, heat
    to boiling, stirring until cubes are dissolved. Gradually add noodles and salt. Cook for 3 minutes,
    stirring occasionally. Stir in broccoli and garlic, cook 4 minutes. Add milk, cheese and pepper.
    Continue cooking, stirring until cheese melts. Makes 12 servings. Maybe frozen up to one month.
    Note: I like to add 1 pound sauteed chicken cubes to the soup.
    FIVE-STAR SOUP
    CHICKEN WITH RED AND YELLOW PEPPERS
    2 sweet red peppers
    5 whole chicken breasts, skinned
    boned and cut into 11/2 inch cubes
    11/2 lbs. asparagus, trimmed and
    2 sweet yellow peppers
    2 tbsp, unsalted butter
    2 tbsp, best quality olive oil
    1/2 cup Madeira
    cut diagonally into 2-inch pieces
    1 tbsp, chopped fresh rosemary or
    1 tbsp, chopped fresh thyme or
    1 tsp dried
    1 tsp. dried
    1 tbsp, fresh lemon juice
    salt and freshly ground black pepper
    1 large tomato, seeded and chopped
    3/4 cup heavy or whipping cream
    3/4 cup snipped fresh chives
    Core and seed the peppers and cut them into squares roughly the same size as the chicken pieces.
    Heat 1 tablespoon of the butter and 1 tablespoon of the oil in a wok over medium high heat. Add
    the red and yellow peppers and stir-fry until crisp-tender, about 4 minutes. Remove from the wok
    and set aside in a bowl.
    Add the asparagus to the wok and stir-fry until crisp tender, 5 to 8 minutes. Remove from the
    wok and add to the peppers. Add the remaining butter and oil to the wok and heat. Add the chicken,
    in batches if necessary, and stir-fry just until cooked, about 8 minutes. Remove from the wok with
    a slotted spoon, leaving the juices in the pan, and a<Jd to the vegetables. Add the Madeira, thyme,
    rosemary, and tomato to the wok. Heat to boiling and cook until syrupy. Pour in the lemon juice.
    When boiling, stir in the cream and cook until thickened. Season to taste with the salt and pepper.
    Return the chicken and vegetables to the wok and coat with the sauce. Heat until the chicken is
    heated through. Remove to a serving bowl and sprinkle lavishly with chives. Serve immediately.
    1 lb. dried white navy beans
    6 c. boiling water
    1 shank end, 3-lb. ham, fully cooked, cut up
    4 c. shredded cabbage (about 1 lb.)
    2 c. thinly sliced carrots
    1 c. chopped onion
    1 c. chopped celery
    1 clove garlic, minced
    1-12 oz. pkg. smoked sausage, thinly sliced
    1-16 oz. can tomatoes
    6 c. more water
    1 tsp. salt
    1/2 tsp. pepper
    1 c. small elbow macaroni
    chopped parsley
    Rinse beans and place in large bowl. Pour boiling water over; cover and let stand 1 hour. Trim
    several small pieces of fat from ham; melt in kettle or Dutch oven. Stir in cabbage, carrots, onions,
    celery, and garlic. Saute slowly, stirring often for 20 minutes. Remove and set aside. Pour beans
    and liquid into another kettle. Add ham, sliced sausage, tomatoes, salt, pepper and 6 cups more
    water. Heat to boiling, cover, simmer 11/2 hours. Stir in sauteed vegetables and cook 30 minutes,
    or until beans are tender. Stir in macaroni. Continue cooking 15 minutes longer, until macaroni is
    tender. Sprinkle with chopped parsley.
    ESCALOPES DE VEAU MADAGASCAR
    11/2 lbs. veal scallops
    1/2 cup flour
    3/4 cup clarified butter
    3 oz. brandy
    11/2 tsp. chopped shallots
    30 green peppercorns
    11/2 cups reduced veal stock or beef bouillon
    Lightly dust veal with flour; saute in butter over high heat 2 minutes for each side. Remove to
    platter and keep warm. Discard butter; remove saucepan from heat. Add brandy, shallots,
    peppercorns, and mustard to saucepan; stir well. Add stock and return to heat, bring to boil. Add
    cream, salt, and pepper. Reduce heat; stir until sauce is dark tan in color, approximately 3 minutes.
    Garnish with slices of papaya and/or strawberry fanned on both sides of plate, with watercress on
    top.
    1 tbsp. Dijon mustard
    3/4 cup whipping cream
    salt

    watercress
    YAM SURPRISE CAKE
    2 c. sifted flour 2 c. sugar
    11/2 tsp. soda 11/4 c. oil
    11/2 tsp. cinnamon 4 large eggs
    1 tsp. salt 2 tsp. vanilla
    1 tsp. nutmeg 2 c. mashed yams
    1/2 tsp. cloves 1/2 c. chopped pecans
    Sift dry ingredients together. Cream together the sugar, oil, eggs, vanilla and yams. Add dry
    ingredients to the mixture. Mix thoroughly. Add chopped pecans. Put into greased Bundt pan.
    Bake for 1 hour (or until brown) at 350 degrees. Let cool for 20 minutes. Cut cake into 3 layers.
    Spread filling between layers.
    FILLING
    2 3-oz. pkg. cream cheese
    2 c. sifted powdered sugar
    1 c. chopped pecans
    1/2 c. soft margarine
    1 tsp. vanilla
    juice of one lemon
    Cream margarine and cream cheese together. Add remaining ingredients. Mix until smooth.
    RECIPES
    RASPBERRY CHICKEN
    2 whole boneless skinless chicken breasts, about 2 lbs.
    2 tbsp, sweet butter 1/4 cup finely chopped yellow onion
    4 tbsp, raspberry vinegar 1/4 cup chicken stock
    1/4 cup heavy cream 1 tbsp, canned crushed tomatoes
    16 fresh raspberries
    Cut each chicken breast into halves along the breastbone line. Flatten each breast half by pressing
    it gently with the palm of your hand.
    Melt the butter in a large skillet. Raise the heat, add the chicken, and cook for about 3 minutes
    per side, or until they are lightly colored. Remove from the skillet and reserve.
    Add the onion to the fat in the pan and cook, covered, over low heat until tender, about 15
    minutes. Add the vinegar, raise the heat and cook, uncovered, stirring occasionally, until vinegar
    is reduced to a syrup spoonful. Whisk in the chicken stock, heavy cream, and crushed tomatoes and
    simmer for 1 minute. Return chicken to the skillet and simmer them gently in the sauce, basting
    often, until they are just done and the sauce has been reduced and thickened slightly, about 5
    minutes; do not overcook.
    Remove chicken with a slotted spoon and arrange on a heated serving platter. Add the raspberries
    to the sauce in the skillet and cook over low heat for 1 minute. Do not stir the berries with a spoon,
    merely swirl them in the sauce by shaking the skillet. Pour sauce over the chicken and serve
    immediately.
    SHRIMP AND FRESH VEGETABLE PASTA SAUCE
    2 lbs. shrimp, peeled and deveined
    2 medium size sweet yellow peppers
    cored and cut into 1/4 inch dice
    2 medium size sweet red peppers,
    cored and cut into 1/4 inch dice
    6 ripe plum tomatoes, cut into
    112 inch dice
    1 tsp. salt
    1 tsp. freshly ground black pepper
    1/2 cup fresh lemon juice
    1 c. olive oil
    1/4 tsp. hot chili oil (available in
    Oriental grocery stores)
    1 medium head of broccoli, cut into florets
    11/2 cups shelled, cooked peas
    fresh or frozen
    1 lb. fusilli or linguine
    2 tbsp, chopped fresh tarragon or
    2 tsp. dried tarragon
    2 tbsp, chopped green shallots
    2 tbsp, hot red pepper flakes
    1/2 cup chopped fresh dill
    Bring 4 quarts of water to a boil in a medium size saucepan. Carefully drop in shrimp and cook
    for 1 minute, or just until tender. Drain, run under cold water to stop cooking and place in a large
    serving bowl.
    Add yellow and red peppers, tomatoes, dill, tarragon, shallots, red pepper flakes, black pepper,
    salt, lemon juice, olive oil, and chili oil to serving bowl. Toss well with shrimp. Prepare at least two
    hours ahead. Coyer and refrigerate.
    Fifteen minutes before serving, remove marinade from refrigerator. Bring 4 quarts of water to a
    boil in a medium size saucepan. Drop in broccoli and cook for 1 minute. Drain and run under cold
    water to stop cooking process. Toss with cooked peas and reserve.
    Just before cooking fusilli or linguine, add the broccoli and peas to marinade. Toss well.
    Cook pasta according to package directions. Drain pasta and immediately toss with shrimp and
    vegetable sauce.
    DILLED SAUCED SHRIMP
    2 tbsp, chopped onion
    11/2 lbs. medium shrimp,
    peeled and deveined
    11/3 c. skim milk
    1 tbsp, butter, melted
    3/4 c. dry white wine
    1/8 tsp. garlic powder
    2 tbsp, lemon juice
    1 tbsp, chopped fresh dillweed or
    1 tsp. dried whole dillweed
    3 tbsp, butter or margarine
    1/4 to 1/2 tsp. salt
    hot cooked rice
    2 tbsp, all-purpose flour
    Saute onion in 1 tablespoon butter in a large skillet until tender; add shrimp, wine, and garlic
    powder. Bring to a boil. Cook 5 minutes, stirring constantly. Remove skillet from heat, and set
    aside. Melt 3 tablespoons butter in a medium saucepan over low heat; add flour, stirring until
    mixture is smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat,
    stirring constantly, until mixture is thickened and bubbly. Add lemon juice, dillweed, and salt,
    stirring well. Stir flour mixture into shrimp mixture and cook 5 minutes, stirring well. Spoon shrimp
    sauce over rice, and serve immediately.
    CHICKEN TAHITI
    2 frying chickens, cut up
    2 tbsp, lemon juice
    2 tbsp, soy sauce
    1/2 c. butter
    1 c. orange juice
    1/2 c. brown sugar
    1 tbsp, cornstarch
    1 large can crushed pineapple, drained or 1
    fresh papaya, cubed (optional) fresh pineapple, cubed
    Dredge chicken in seasoned flour. Heat butter in a heavy skillet. Saute the chicken lightly. Remove
    from the skillet to a rack in a shallow baking pan. Bake uncovered until tender, 30 to 40 minutes
    in a 350 degree oven, basting with added butter if necessary and turning occasionally.
    While chicken is baking, combine in a saucepan, stirring constantly, the lemon juice, soy sauce,
    orange juice, brown sugar, and cornstarch. Bring the mixture to a boil. When thickened and clear,
    add crushed pineapple. Pour the sauce over the baked chicken. Return to oven and bake 10 minutes
    longer. Serve with rice and vegetables.
    LEMON LUSH
    11/2 c. flour 11/2 c. finely chopped walnuts
    3/4 c. butter or margarine 18-oz. pkg. cream cheese, softened
    1 c. sifted powdered sugar 2 8-oz. containers Cool Whip
    2-3 3/4 oz. pkgs, lemon instant pudding and pie
    filling mix 3 c. milk
    Combine flour and 1 cup walnuts; cut in margarine until mixture resembles coarse crumbs. Press
    onto bottom of 13 X 9 inch baking pan. BAke at 375 degrees 20 minutes. Cool.
    Combine cream cheese and sugar, mixing until well blended. Fold in 1 container Cool Whip;
    spread over crust. Prepare mix as directed on package for pudding, except using 3 cups milk.
    Spoon over cream cheese layer. Spread remaining Cool Whip over pudding layer. Sprinkle with
    remaining nuts. Refrigerate several hours or overnight. Makes 10 to 12 servings.
    Note: Chocolate or butterscotch instant pudding maybe used instead of lemon. Both are quite
    good.
    LAMB KABOBS
    1/3 c. cider vinegar
    1/3 c. vegetable oil
    2 tsp. dried whole basil
    1/8 tsp. pepper
    3 stalks celery, in 1-inch cubes
    1/8 tsp. pepper
    2 cloves garlic, crushed
    1 tsp. salt
    1 lb. boneless lamb, cut into
    1-inch cubes
    1 large sweet red pepper cut into 24 pieces
    Combine vinegar, oil, garlic, basil, salt and pepper in a saucepan. Bring to a boil; reduce heat and
    simmer 5 minutes. Let cool. Pour half of marinade over lamb in a shallow container; pour remaining
    marinade over vegetables in a separate shallow container. Cover containers, and let marinate in
    refrigerator for 6 hours. Remove lamb and vegetables from marinade, reserving vegetable
    marinade. Alternate lamb, celery and red pepper on 12 (7-inch) skewers. Place kabobs on a rack
    in a lightly greased broiling pan. Broil about 4 inches from heat 6 to 8 minutes, turning kabobs
    once and basting occasionally with marinade.
