The two diamond stars tested the Desert Inn course while in Las Vegas during an appearance at Caesars Palace. Fresh Plum Cheesecake The fresh fruit flavor of California plums gives this dessert a rich tart, sweet flavor. You can buy a fresh or frozen cheesecake, or make one at home. Then top it with plum sauce and garnish with additional fresh plum slices. Early plums such as Santa Rosas, Beauty and Burmosa are in the markets and the mid-season varieties like Kelsey and Wickson will be arriving soon. PLUM TOPPING 2 cups sliced fresh plums 2 tablespoons water 1 V2 cup honey 2 teaspoons cornstarch | 1/4 cup port wine Combine honey, water and cornstarch. Add 1 cup sliced plums and simmer 10-15 minutes until sauce thickens. Add wine, stir and coat top of cheese cake. Garnish bottom of cake plate with remaining crumbs. CHEESE CAKE 1-6 oz. package zwieback j^^cup sugar j V2 cup soft butter 2-8 oz. pkgs. soft cream cheese I 1A cup granulated sugar 1 teaspoon lemon juice | 1/s teaspoon nutmeg 2 teaspoons vanilla 1 envelope unflavored gelatine Grated rind of whole lemon I V2 cup cold water 1 cup heavy cream, lightly whipped j 3 eggs, separated V2 cup sour cream 1 recipe plum topping Preheat oven to 400??F. Crush zwieback with rolling pin into fine crumbs. Mix thoroughly with butter, sugar and nutmeg. Line bottom and 3A of side of a 9-inch spring form pan. Bake crumbs 10 minutes, then cool. Sprinkle gelatine over cold water. Set aside. Combine egg yolks with sugar and add V2 cup water. Cook over low heat, stirring constantly until thickened, about 10 minutes. Stir in softened gelatine until dissolved. Put cream cheese in bowl and beat with mixer at medium speed; gradually beat in egg gelatine mixture, then lemon juice, vanilla and lemon rind. Beat egg whites until stiff but not dry. Blend lightly whipped cream and beaten egg whites into cheese mixture. Turn into crumb lined spring form pan. Refrigerate until set. Then spread sour cream over top. Return to refrigerator, and chill again. Before serving, remove side of spring form pan and place cheese cake on serving plate. Cover sour cream with plum topping and garnish bottom of cheese cake with fresh plum slices. Pass additional plum topping. Serves 8.
