Although the menus in this collection cannot provide a complete history of Las Vegas dining, they do illustrate the breadth and variety of restaurants that existed in the past and how they have changed over the years. Dining has always been a large part of the Las Vegas tourist experience, and the menus in this exhibit provide a sampling of the cuisine and the restaurants that shaped this experience.

And if Las Vegas dining has arguably become more sophisticated in many respects, these menus show proof of a culinary legacy that is far more “palatable” than is commonly perceived.
